Roasted Red Pepper Hummus by Steve Schimoler



                         Preparation: 10 minutes      Program: Smoothies
                         Yield: 4 cups
  • 6 ounces roasted red peppers
  • ½ cup water
  • 2 Tbsp olive oil
  • ½ cup tahini paste
  • 2 ½ Tbsp lemon juice
  • 2 garlic cloves, peeled
  • 1 tsp hot sauce
  • 3 cups canned garbanzo beans, drained
  • 1 tsp cumin powder
  • 1 tsp salt
  • ½ tsp black pepper
1. Place all ingredients into the Vitamix container in the order listed and secure lid.
2.  Select Smoothies program.
3.  Press Start.
4.  Allow machine to complete programmed cycle.  Add water if necessary to keep mixture flowing freely through blades.
[If you are using the 5200 series, simply work your way up to high setting and leave there for 30-45 seconds]
