This vegan broccoli cheese soup is a variation of Vitamix’s recipe that they have in their recipe book. Only this recipe contains no milk or cheese, making it a tasty choice for vegans looking to warm up on a cool day. Broccoli is filled with nutritional goodness too. It includes vitamin A (mostly beta-carotene), C, folic acid, calcium, and fiber. Vitamin C and beta-carotene are important antioxidants which have been shown to reduce your chance of cataracts, heart disease, and certain cancers.
This recipe also calls for nutritional yeast which is a deactivated yeast with a cheesy taste. Nutritional yeast is an excellent source of animal-free vitamin B12 (necessary for nervous system health), folic acid, and a number of other minerals. And if the nutritional quality of this soup doesn’t grab your attention, the taste will!

Ingredients
- 1/2 cup almond milk (unflavored & unsweetened)
- 1/2 cup vegetable broth
- 1/2 cup nutritional yeast
- 1 1/2 cup fresh broccoli
- 1/2 tsp kosher salt
- 1 tsp diced onion
Directions
- Place all ingredients into your Vitamix container in the order listed and secure lid.
- Select Soups program. [If you are using the 5200 series blender, simply work your way to high setting and leave there for approximately 4-5 minutes or until soup is hot]
- Press Start.
- Wait for cycle to finish.
- Pour and enjoy!

I LOVE Broccoli Cheese Soup, it's the one soup I miss the most. I have tried a couple different recipes and have not been very pleased with the results so maybe this will be the one 🙂
It's really good. I usually add a clove of garlic and a pinch of white pepper too, but some people aren't crazy about garlic or spiciness.
I love garlic but found after eating it raw once that I was allergic to it in the raw state(nothing like thinking you are going to die,lol) so I have to have it really cooked in a recipe. I think I add fresh ground pepper to everything so I will be putting that in it for sure but I would like it better with garlic. Have a good day 🙂
I made this and really liked it but wanted to share how I tweaked it on my second serving. I use mashed potatoes to make vegan soups creamy and thick but didn't have any made today so I improvised. I had a large baked potato(cooked) so I used a little more than half and added it to the leftover soup in the Vita-mix. It really finished it off and tasted just like the regular stuff. I also added some homemade blackened seasoning mix but you could use store bought.
