Garlicky Tomato Soup

Need a little more Vitamin K in your life?  Sure, we all do.  But that’s not all you’ll get from this garlic-infused tomato soup.  It will also supply you with Vitamins A and C, plus folate, potassium, and Manganese.  Staying healthy and eating great never tasted this good!

Preparation:  7 minutes

Program: Hot Soups

Yield: 2 servings


  • 4 Medium Tomatoes
  • 2 Medjool Dates
  • 2 Cloves Garlic
  •  juice of 1/3 lemon (approx. 1 1/2 tsps)
  • 1 tsp Kosher Salt
  • 1/2 cup Water
  • pinch Fresh Oregano (garnish/optional)


1.  Place all ingredients into your Vitamix container (except Oregano) and secure lid.

2.  Select Soups program.

[If you are using the 5200 series blender, simply work your way to high setting and leave there for approximately 4-5 minutes or until soup is hot]

3.  Press Start.
4.  Wait for cycle to finish.
5.  Pour and enjoy!
