Cheap Vegan Recipe Series: Cucumber and Ginger with Soy Sauce Salad

It is possible to cook delicious vegan meals without spending any money at all! Here is quick and easy Japanese inspired vegan recipe that uses items you probably already have in your kitchen and fridge.

 

Total Cost to Cook: $1.25

  • Soy Sauce: Free from take out Japanese
  • Ginger: Free from take out Japanese
  • Wasabi: Free from take out Japanese
  • Cucumber: $.25
  • Avocado: $1.00

 

Ingredients

  • 1 Cucumber
  • 1 Avocado, firm
  • Ginger (sliced)
  • Soy Sauce

Steps

  • Wash all Veggies
  • Cut cucumber in hald and trim off ends.
  • Peel cucumber and remove center seeds
  • Cut cucumber into 4 pieces and then into thin strips
  • Peel and Pit avocado into this slice and add cucumber
  • cut ginger into small pieces and mix in
  • stir in a quarter sized amount of wasabi
  • drizzle with soy sauce
